Skinless, boneless chicken breast (mock Chicken parmesan.)
With mallet/tenderizer, or heavy ironstone saucer, tenderize the breast very thin. Roll in Italian crumbs. In heavy skillet: brown both sides in a little olive oil. Cover each piece with grated cheese (mozzarella, monteray, or parmesan.) I use parmesan. Cover with 1-1/2 cups italian sauce or italian tomato sauce with garlic and basil (or use fresh basil, rosemary, and crushed garlic cloves.) Cover chicken and let cook until chicken registers 180 degrees. Serve immediately and ladle any remaining sauce from pan over plated chicken.

for an hawaiian chicken dish marinate overnight in v8 splash tropical kuice and grill with pineapple slices

A simple way to cook chicken is to marinate it in Italian salad dressing for a couple of hours, then bake it in the dressing. It comes out really good, I think. Be sure to cover it with foil and bake for about 45 min, bake it for 30, then take the foil off and brown it for 15.

Pat dry with a paper towel. Rub all over with a heavy coat of mayo.
Sprinkle on whatever spices you like. Salt,pepper and thyme work well.
Bake @ 350.
Skin will be crispy brown and chicken moist. Looks great and taste the same.
Flavored rice, stuffing or most any kind of potatoes is about you need to go with it.
