THANKS YALL ILL TRY SOME OF THE RECIPES SOON AS IM FEELING A LIL BETTER . HADNT RESPONED BECAUSE IVE BEEN IN FOR SURGERY . I ACTUALLY ATE AT BO-JO"S TONIGHT HAD TO EAT OUT CANT BE ON MY FEET TO COOK , BUT I CERTAINLY AM GONNA TRY SOME OF THOSE RECIPES SOON . '

! tbs vinegar 1 cup whole milk let it set 5 minutes
Buttermilk will make a lighter and fluffier biscuit too.

Is there any substitute for buttermilk? Will regular milk work as well in the biscuit recipe?

I tried the biscuit recipe last night for dinner, and had the leftovers for breakfast today. They are very good! Not quite the same as bojangles, but better than the biscuits I normally make!

Cajun Bites 1/3 cup lemon juice 1 1/2 Tbs Cajun seasoning 3 cloves garlic, minced 2 tablespoons Tabasco sauce 2 tablespoons Worcestershire sauce 1 tablespoons vinegar 4 boneless chicken breasts halves, cut into bite-sized cubes 1 cup Seasoned flour (see below) 3 eggs, lightly beaten Combine lemon juice,seasoning, garlic,vinegar, Tabasco and Worcestershire sauce in small bowl. Stir in chicken cubes; cover and chill for 6 to 8 hours or overnight. Lift chicken from marinade; roll in egg, then in flour mixture to coat evenly. Place on a non-stick baking sheet. Bake chicken nuggets at 400° for 10 to 12 minutes. Serve hot or cold. ... Cajun Seasoned Flour 2 cups flour 2 tablespoons salt 1 tablespoon celery salt 2 tablespoons black pepper 2 tablespoons dry mustard 4 tablespoons paprika 2 tablespoons garlic powder 2 tablespoon Onion powder 1 tablespoon Cayenne pepper 1/2 teaspoon thyme Stir together to blend evenly. Store in a tightly covered jar. For a crumb coating on fish, meat or poultry, combine 1 1/2 TBSPS of seasoned flour with 1 cup of dry bread crumbs.

Cajun Fried Chicken Yields: 6 servings INGREDIENTS 1 (3 pound) whole chicken, cut into pieces 1 cup all-purpose flour salt to taste (cajun seasoning contains lots of salt so go easy) ground black pepper to taste 1 Tbs paprika 1 Tbs cajun seasoning 1 Tbs cayenne pepper 1 quart vegetable oil for frying
DIRECTIONS Season chicken pieces with1/2 of salt, pepper, cajun seasoning and paprika. Rub well Add other 1/2 of mix to flour roll chicken in flour. Add 1/2 to 3/4 inch oil to a large, heavy skillet. Heat to approximately 365 degrees F. Place chicken pieces in hot oil. Cover, and fry until golden, turning once, 15 to 20 minutes. Drain on wire rack.

Bojangles Biscuits Ingredients: 3 cups self rising flour 3 teaspoons baking powder 2 teaspoons confectioners sugar 1/2 cup shortening 1 1/4 cup buttermilk butter Directions: Mix dry ingredients. Cut in shortening. Stir in buttermilk. Knead a few times, roll or pat out on a board and cut with a biscuit cutter. Bake in 450-degree oven for 12 minutes (or until golden). Brush with butter.

Cajun Pinto Beans Ingredients 1 small bag pinto beans, washed and picked through 1/4 cup flour 1/4 cup bacon grease 1 large onion, chopped 6 each clove garlic, chopped 1/2 cup celery, chopped 1 each bay leaf 1/4 cup chili powder 2 tablespoon ground ***in 1 can ro-tel tomatoes w/chiles 1 salt to taste 2 lb ham hock or salt pork optional 1 chopped cilantro ,,optional Instructions Pick through pinto beans and wash. Soak 1 small bag pinto beans overnight in cold water and 1 tbsp of baking soda. Rinse beans and cook for 1 hour. Change water and add 1 tbsp baking soda again. Cook for another hour or two and change water for last time, add baking soda and cook till done. Roux: Fry 1/4 cup flour and 1/4 cup bacon grease into dark roux (color of cocoa). Add and stir the following until wilted: 1 large chopped onion, 5 or 6 cloves chopped garlic, 1/2 cup chopped celery, 1 bay leaf, and cilantro. Add 1/4 cup chili powder, 2 tablespoons ground ***in, 1 can Ro-tel tomatoes with chilies and salt to taste. May be cooked with a 2 pound ham hock or salt pork. Using this roux adds a truly great flavor to pinto beans. Serve with a double batch of your favorite cornbread.
