I smiled when I saw the title of this thread. It reminded me of something the late great Justin Wilson said on one of his shows back in the 80's when "blackened" everything was the rage. When asked about blackened chicken his reply was, "If my mama fried anything that turned out blackened she would have thrown it out and started over". You had to have seen the episode to appreciate the tongue-in-cheek response.

I have used the seasoning mix on fish,steak and fillets of fish.All with great results.

Blackened Chicken INGREDIENTS 1/2 teaspoon paprika 1/8 teaspoon salt 1/4 teaspoon cayenne pepper 1/4 teaspoon ground ***in 1/4 teaspoon dried thyme1/8 teaspoon ground white pepper 1/8 teaspoon onion powder 2 skinless, boneless chicken breast halves 1 tablespoon vegetable oil DIRECTIONS: 1.Preheat oven to 350 º F. Mix together paprika, salt, cayenne, ***in, thyme, white pepper, and onion powder. Rub one side of chicken breasts with spice mixture. 2.Heat oil in a cast iron skillet over high heat for 15 minutes. 3.Place chicken in hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on other side. Place breasts on a lightly greased cookie sheet. 4.Bake in preheated oven for 5 to 10 minutes, or until no longer pink and juices run clear.

go to spice asle at supermarket and they have several different brands of spices that you can purchase to make blackened chicken.

when I was in high school they had this blackened chicken that was great. Does anyone know what I am talking about and have a good recipe?
