I use my Italian cream cheese cake recipe and substitute black walnuts instead of pecans. Delicious.

Butterscotch/Walnut Pound Cake
Ingredients 1 box yellow cake mix 1 3-1/2 box butterscotch pudding mix (instant) 1/3 cup canola oil 1 cup water 1 cup chopped black walnuts 4 eggs 2 tbsp black walnut or butter nut extract
Mix grease and flour 6 cup cake pan or tube pan mix putting and cake mix, oil, water, eggs with mixer add walnuts pour into tube cake pan Bake cake 45 to 50 minutes in pre-heated 350 oven (if making cup cakes line muffin paper and spray with Pam. Bake at 350 for 25 minutes)
Cool and glaze or frost when cake is cool.
Brown Sugar Pound Cake
Ingredients
1 cup shortening 1 stick margarine or butter (softened to room temperature) 1 box light brown sugar, sifted 3 cups cake flour (or plain flour) 1/2 tsp salt 1/2 tsp baking powder 1 cup evaporated milk (If you wish, you can add 1/cup floured, coarsely chopped nuts to this if it is to be a frosting rather than a a drizzle) 2 tsp maple, walnut, or butternut flavoring
Cream shortening and margarine (or butter) and sifted brown sugar Add eggs, one at a time, beating well after each addition Sift remaining dry ingredients and add them alternately with milk. Add flavoring. Pour mixture into greased and floured tube or bundt pan Bake at 300 in preheated oven for 1-1/2 hours.
Frosting
1 stick margarine or butter 1 packed cup brown sugar 1/4 cup evaporated milk 3 cups powdered sugar 1 tsp vanilla extract (sprinkle 1/4 cups finely chopped nuts on top if you wish)
Preparation Melt margarine on medium heat Ad brown sugar and stir 1 minute Add milk, powdered sugar and vanilla. Blend until creamy smooth Frost Thin frosting if you want it to be a drizzle

I think that Randy's produce in Millers Creek sells Watkins flavorings. I have bought black walnuts there around Christmas time.

thank you whitehawk. ahhh toasted hickory nuts....yes that would make it better....yummy. please send it to me when you get time. i appreciate it dearly. i hope you can find me a good frosting for it too. i'll check back with you on the weekend. THANKS AGAIN.

I'll look up my mother in law's black walnut cake recipe. I expect it will be toward the weekend before I can find it. I know that it has finely chopped walnuts which we always bought at Lowes. I always buy several packages of black walnut meats at Christmas and freeze them for use throughout the year. She also used black walnut or butternut flavoring from Watkins. I don't know who sells it in Wilkes but it is great. I'll try to find the address of Watkins and maybe they can tell you who sells it in the county. (Toasted hickory nuts are even better, if possible, although unless you have some frozen then you'll have to wait until late fall for them.)

does anyone have a good recipe for black walnut cake and frosting? i have found a few already, but they don't have the walnut flavoring in it. my mother used to make the best black walnut cake. she does'nt remember the recipe is why i am asking....anyone? how about you whitehawk? you post some good recipes....lol
