Kinda new here but I'm looking to buy some beets for canning. It may be a little early for them but I just got a great canning recipe last year and I'm about out!!

But here's the recipe...

Soak beets in water to clean. I use my outdoor cookstove for canning beets as I found out they are pretty messy. Put beets into big pot of water and boil for About 30 minutes. Test to make sure that they are done. While beets are boiling put 1 1/2 cups water 31/2 cups white vinegar (apple cider makes worse color but some prefer over white)
11/2 tsp salt 2 cups sugar in a pot and start simmering. In cheesecloth put 2 sticks cinnamon and 1 Tbl. whole cloves (Some like allspice instead) Drop wrapped cheesecloth into pot and simmer while beets cook.

When beets are done cool and slip skins off beets and quarter and place in jars. Remove cheesecloth and pour solution over beets. Cover and seal jars. Process pints or Quarts 30 minutes in a water bath canner.

I put the spices in a cheese cloth because when the spices touch the beets it causes discoloration. (Dark spots) This does not affect the taste just the looks. I took these to my girlfriends family and they were quite amazed!!
