I make mine in the crockpot. Put you beef in a bag with flour and shake then sear meat in a hot pan with butter. Transfer meat to the crockpot and add water to the frying pan and scape all the drippings out of the frying pan and transfer to the crockpot. Add 2 packets of brown gravy mix or mushroom gravy mix with amount of water on packet directions. Then add potatoes, carrots and onions. Season with salt and pepper and cook on low heat all day. I like mine with egg yolk noodles and toasted french bread.

flour and season brown beef stew....fry over medium heat...
remove from pan....cook a sliced onion in drippings, remove...

then in the drippings I make a gravy, I'm sure you can make a gravy.
But, what I do is make a thin gravy and add the browned meat and onions into the gravy....and simmer it slowly...the gravy will thicken and the meat will tenderize.

If you wish you can add thinly sliced carrots and green peas

3 lbs Stew Beef (with some fat) if large chunks then cut to 1" cubes.
2 qts water
2 tsp garlic salt
2 tsp ground black pepper
1 tsp salt

Place on low heat (I start mine on medium low) and cover
I let mine cook for about 4 hours, stirring occasionally and I allow the water to reduce to about 1-1/2 cups (just enough to reach top of meat.)

Add 1 cup hot water from tap and raise heat on meat until it starts curling around the edges. Stir well. Meat should be very tender but not all to pieces.

When meat is tender I mix 4 oz cold water to two tbsp corn starch and mix well. I add, by tbsp,, the corn starch slurry and stir well after each tbsp is added. (Unless you like really thick gravy you will not likely need all of the corn starch.)

If you like the taste of wine then you can add 1/3 to 1/2 cup burgundy or any red wine you like. Serve with rice or mashed potatoes.

Now, if you want to cook this in a crock pot you can do it nicely. Just adjust temperature and cooking time. Reduce water to 6 cups.
