This recipe is from Ree Drummond, Pioneer Woman. Great with corn bread, so would go really well at a fish fry.
Spicy Beans
4 cups dry pinto beans
1 ham hock
1 to 2 tablespoons sugar
1 diced onion
2 diced bell peppers
4 minced cloves garlic
2 sliced jalapenos
2 teaspoons salt (to taste)
2 teaspoons chili powder
2 teaspoons black pepper (to taste)
Sort and rinse beans well. In a large pot cover beans with water by about 2 inches. Cover and cook beans with ham hock and sugar for about 2 hours, then add the rest of the ingredients and cook another 30 minutes or until beans are tender and juice is thick. You may have to add more water during the cooking time.
You can also cook in a slow cooker overnight.

Try this from Southern Living/Cooks and modified by me.
Ingredients: 2 (19 ounce) cans navy beans, canolini, or great northern beans, drained and rinsed1 teaspoon salt1/4 teaspoon pepper5 slices bacon, diced4 carrots, peeled and chopped2 celery ribs, chopped1/2 teaspoon dried thyme Optional
1 garlic clove, minced2 tablespoons tomato paste Optional
1 onion, finely chopped1 (10 ounce) can chicken broth2 cups water1 cups whole milk1 cup evaporated milk
Directions: 1 Fry bacon until crisp. Remove from pan and reserve. Leave about 1 tbsp bacon fat in skillet. Add carrots, celery, garlic, and onion. Saute until softened, about 10 minutes. 2 Add salt, pepper, thyme, and tomato paste. 3 Add beans, chicken broth, and water. 4 Simmer, covered, until vegetables are done and soup is the consistency you like. 5 Additional water can be added if it gets too thick.
