This receipe sounds very interesting, could you use pintos instead of kidney beans or are they to soft you think?

This is the way my mother made them:
She and my siblings loved them. I loathed them!
2 cups black eyed peas, drained and rinsed Salt to taste (about three quick shakes is enough) Black Pepper to taste Red or Cayanne pepper to taste Three or four dashes Texas Pete to taste (she liked it hot) 2 cups self-rising flour (1/2 cup reserved) 1 Medium to small onion, diced very fine
Mash peas very fine, add all ingredients except flour. Mix well and begin adding flour. Mix well and begin adding flour until mixture is easily formable into a patty. You may want to add all of the flour, but it may be too stiff if added all at once.
Grease frying pan with olive or canola oil...Okay, let's be serious! Our grandmothers and our mothers used fatback grease if this was made in the 20's, 30's, and 40's!
Place patties in pan and lightly brown about 2 minutes before turning over. Don't crowd the pan. Be sure to have a lid handy as these little stinkers will splash hot fat on you and the stove.
When browned as well as you like them you can then add a little cheese on top and cover until melted. Your grandmother and my mother didn't add the cheese but it may make them more interesting to picky children and men who aren't willing to eat anything that their mamas' didn't cook.
Place patty on bun with ingredients you like or eat plain with corn fritters or sliced corn bread (with homemade cowbutter if you are lucky enough to get it), a side of cucumbers, sliced tomatoes, cantaloupe, and a good, cold glass of buttermilk will surely "brang back 'am olden days, fer sure."
One other thing they will bring back is the horrible smell if you let the blackeyed peas scorch.
If they do scorch, put a handfull of salt and a little vinegar in the rinsed out pan. Let set for a few minutes and you'll be able to get rid of the smell as well as the scorch. Good luck!
