I always use hickory chips or applewood chips in a smoker but you can do it in a grill aswell with a smoker box. just soak the chips in water for a bit then set them on the heat. And if I may suggest what kind of ribs I always use country style because of the meat . Smoke them for about 4hrs or more depending on heat in ur grill/smoker. I sauce mine almost the whole time with anykind of sauce i choose. It gives them the smokey but saucey flavor. And everytime i cook them i cook about 8lbs at a time and there is Never any left for the next day..good luck

Baby Back Ribs 4 lb Pork backribs 2/3 c Yellow mustard 1/3 c Coca Cola 1 tb Ground black pepper 1 tb Garlic salt Barbecue sauce;.... see below Peel the membrane off the back of the ribs. Mix the wet and dry ingredients together. Rub the marinade onto the ribs. Cover or wrap with plastic wrap and refrigerate overnight. Prepare the grill for the indirect method of cooking. Put ribs on grid or in a rib rack. Cook at 275 º for three hours and fifteen minutes. Mop on bbq sauce after ribs are taken out of the grill. Serve. Bar B Que Sauce Ingredients 2 tablespoons vegetable oil 3 celery ribs, finely chopped 1 red bell pepper, seeded and finely chopped 1 green bell pepper, seeded and finely chopped 1 onion, finely chopped 4 cups coarsely chopped ripe tomatoes or tomato ketchup 1-1/2 cups firmly packed dark brown sugar 1/2 cup prepared yellow mustard 1/4 cup Worcestershire sauce 1/4 cup fresh lemon juice 2 tablespoons garlic powder 2 tablespoons ground ginger 1/2 teaspoon chili powder 1/2 teaspoon cayenne pepper 1 teaspoon freshly ground black pepper 1 teaspoon salt
Method In a large saucepan, heat the oil over medium heat. Add the celery, bell peppers, and onion and cook until the vegetables are slightly softened, 3 to 4 minutes. Add the tomatoes and brown sugar, reduce the heat, and simmer, stirring occasionally, until the sugar is completely dissolved. Add the remaining ingredients. Cover and cook over low heat for 1 hour, stirring occasionally. Check the seasonings, adding more salt if needed. Let cool, store in an airtight container, and place in the refrigerator. It will last for months.

I always put mine in a roaster with Montreal Steak seasoning and cook them until they are about 3/4 of the way done , then transfer them to a hot grill and baste with BBQ sauce, usually KC Masterpiece mixed with cayenne pepper and red pepper flakes. I baste one side(usually the meaty side) and put it that side down on the grill, then baste the other side .... baste again before turning.... and only turn once or twice because the more you turn the more likely it is that the rack will fall apart.
