NC Mountian BBQ Sauce &Rub Barbecue Rub 2 Tablespoons granulated sugar 2 Tablespoons brown sugar 2 Tablespoons ground ***in 2 Tablespoons chili powder 2 Tablespoons salt 2 Tablespoons freshly ground black pepper 1 Tablespoon cayenne 4 Tablespoons paprika Mix together all the ingredients thoroughly. The rub will keep for several months stored in a cool, dark place in an airtight container. Yields 1 cup. ````Mountian Barbecue Sauce ```` 2 Tablespoons vegetable oil 1 large yellow onion, chopped 1 (14.5-ounce) can tomato puree 1 (14.5-ounce) can tomatoes, with juice ½ cup white vinegar 2 packed Tablespoons dark brown sugar 2 Tablespoons granulated sugar 1 Tablespoon salt 1 Tablespoon freshly cracked black pepper 1 Tablespoon paprika 1 Tablespoon chili powder 2 Tablespoons molasses ¼ cup Basic Barbecue Rub ½ cup orange juice 4 Tablespoons yellow mustard 1 (12-ounce) bottle dark beer Heat oil in large, heavy-bottomed saucepan over medium-high heat. Add the onion and sauté, stirring frequently, until golden brown, about 10 minutes. Add the remaining ingredients and bring to a boil. Reduce heat to very low and simmer gently for 2 hours. Stir the sauce occasionally, scraping the bottom of the pot to prevent scorching. Transfer the sauce to a food processor or blender and puree in 2 batches. Transfer to a clean glass jar and store for up to 7 to 10 days in the refrigerator.
NC Vinegar BBQ Sauce 1 gallon apple cider vinegar 2 cups sugar 2 tbsp salt 1/4 cup red pepper flakes 2 tbsp black pepper Dissolve sugar, salt and pepper in vinegar on stovetop. Heat to hot, but try not to boil. The purpose is to dissolve the dry ingredients. Notes: To adjust “HOT”, adjust the amount of black pepper, NOT red pepper. Sauce can be made in smaller quantities, just keep proportions the same. Sauce can be made ahead of time Cooking Tips Put the meat on the grill first. Cook about 5 minutes on each side, then take tongs or a brush/spoon and baste meat, or dip the pieces of meat into the sauce. Dip or baste every 5 minutes for the first 30 minutes, then about once every 15 minutes. Cooking time for both ribs and chicken is about 1 ½ hours (cooking on charcoal – you’re on your own on gas – we don’t know how!). For chicken – if you are cooking for a large crowd, whole chickens are easiest – much less dipping, and the chickens are easy to cut after they are cooked. For ribs – same as chicken – leave the ribs in big sections, cut after they are cooked.

1/2 teaspoon red pepper
heat until margarine is melted. Do not boil
Will do one chicken with some left over for dipping.

I only want to make small amounts at a time, maybe enough for 4 halves at a time. Does it not have some kind of oil in it.? If I make it oil instead of butter will it still need to be refrigerated?

I think there is someone who sells it. Maybe check with Millers Creek Fire Department. They may know who it is.

Does anyone have the recipe for the barbeque sauce that the Union United Methodist Church uses. It might be the same as Millers Creek Fire Department. I am wanting to do about 50 halves for a birthday party
