I use 1/2 tsp cloves. May be a little strong for you so you may have to experiment. I also use brown sugar instead of white sugar.

horton, I used 1/4 tsp of cloves in my banana nut bread. I didn't have any ground cloves, just had whole cloves, so I picked the bud off the whole cloves and put them in my mortor & pestal and ground it myself.

Information for new cooks and older ones like me that just didn't know....

You can buy Baker's Joy at the grocery store. It's located near the Pam. But Crisco has come out with a spray too that has flour that I like better. I use this when baking a cake or bread. It's sprays like Pam but has the flour too. A lot of older recipes will say to grease and flour a pan. I use this spray instead.

So do I need to use less than the 1/4 tsp cloves listed on the banana bread recipe or the same? I am new at making my own stuff- trying to learn some new recipes.

Ground cloves (in moderation) would be okay. Would be a great taste if allspice, nutmeg, and cinnamon were also added. BTW, Pumpkin, zucchini, apple, carrot, or squash bread, or a combination of any or all makes a wonderful bread,

Here it is missy...

3/4 cup oil
1 2/3 cups sugar
3 eggs
2 cups self-rising flour
1 tsp. cinnamon
1/4 tsp. cloves
1 1/2 cups riped bananas, mashed
1 tsp. vanilla
1 cup chopped walnuts

In mixing bowl, combine oil and sugar; mix it well. Add eggs and mix it into the oil and sugar mixture. Sift together flour and spices. Add to mixture 1 cup at a time, blending well. Add bananas continue mixing it well. Stir in vanilla and nuts. Spray pan with PAM or well greased and floured loaf pan or tube pan. Bake 55 minutes at 350 degrees.

* I used a tube pan sprayed with PAM and the bread popped right out when I took it out of the oven.

We mash them and fill the freezer bag and press it so it is flat. We then put it into another freezer bag so there won't be ice crystals (freezer burn) forming on the bananas. Can't tell the difference between fresh and frozen when baked into bread or when mixed in ice cream mixture when making home made ice cream.

Thanks Nugget, I will do that. Someone gave me two bunches of bananas and I am making a banana bread right now. But, I still have 9 bananas left and I didn't want to waste them.

yes,or just freeze them whole and mash them when you use them, then they don`t taste like your freezer.
