Cheesecake, as in chocolate cheesecake and a pineapple cheesecake!!!

This class is great. It doesn't matter if you learn to cook a thing. These gals a something . But we do learn alot of good ideas.Thanks 1Goddess. And sorry about your cup.LOL

Oh, I must add...that freddiemae brought us some wonderful recipes to try also...here are a couple...

Sugar Plums
1 can eagle brand milk
1 cup vanilla wafer's crushed
14 oz coconut
3 pkgs jellow, whatever flavor you want, but needs to be 3 of the same

Mix milk,vanilla and coconut and one pkg of jello
Wear gloves, rool this mix into 1 oz balls
Pour other 2 boxes of jello into bowl and coat the balls that you just made with dry jello...store in refrigerator!

Special K Cookies
2 cups s/r flour
1 cup butter softened
2 cups frimly packed brown sugar
2 eggs
1 tsp vanilla
1 cup flaked coconut
1 cup chopped walnuts or pecans
1 cup raisins
4 cups Special K cereal

Beat butter and sugar, add eggs, vanilla and flour and beat well
spoon in coconut, nuts, raisins and mix well with spoon
stir in cereal
Drop by Tbspn onto ungreased cookie sheet
bake @ 325 12-14 minutes or until brown
yields about 6 dozen cookies.

Good chewey cookies sort of like oatmeal raisin just without the spices!!

Baking Class update....

Laugh, laugh, and laugh somemore...

We now have a baking class original...well, maybe a semi original fudge recipe....

While gathering our ingredients to begin preparations for our pumpkin fudge, we discovered that the recipe we were using called for white chocolate chips...since we didn't have those, we decided to use milk chocolate...now we have pumpkin fudge, with a very distinct flavor, now I'm talking melt in your mouth, make you wanna slap yo mama flavor!!!
We all decided that we would call this the "Better than Sex Chocolate Pumpkin Fudge" !!!! Folks, I ain't lying....it just about is better than sex!!! LOL! The recipe is as follows...

2 Tbsp butter, followed by a round of laughter
2 1/2 cups white sugar, followed by a round of laughter
2/3 cup evaporated milk, followed by a round of laughter
1 1/3 cup white chocolate chips...of course followed by around of laughter since we didn't have any white chocolate chips
1 tspn vanilla extract...you know what's coming!!!!
7 oz marshmallow cream...yep..there's another story to tell here also...

After discovering there was no marshmallow cream in the house either...I scoured deep into the kitchen cabinets and found some mini-marshmallow's...so we figured hey, let's nuke'm...then we will have marshmallow cream...folks, have you ever nuke'd marshmallow's...thank goodness freddiemae was paying attention...all of a sudden she jumps ~n~ hollars, needless to say the marshmallow's are dang near covering the inside of the microwave!!!! Yep folks you got it...we definitely need a baking class...now back to the ingredients list.

3/4 cups pumpkin...yes, you gotta have laughter here too!!!
1 tspn ground cinnamon...and you know what happens next!!!!

line a 9x9 pan w/ foil and laugh like he!!
In a 3qrt saucepan, heat milk and sugar over medium heat....
bring to a boil, stirring occasionally with a wooden spoon...I wouldn't have any of those either, had I not gone to the dollar store last week! Whew!!!
Now, Stir in the marshmallow cream, if you don't have any...well, you know what to do!!! See nuking instructions for mini-marshmallows!
Stir in butter and of course by this time another round of laughter is required!!! Bring this to a rolling boil, stirring occasionally for 18 minutes...might want to trade hands here as it does kind of get tiresome
Remove from heat and add chocolate chips, be they white or milk chocolate...either one works...but if you want something almost better than sex use the milk chocolate!!!! Laughing all the while!!!
Then add your vanilla.
Stir til creamy and chips are melted. Pour into pan. Cool and remove from pan and cut into square..store in cool dry place.

Now for the Pumpkin Pie

Folks this is really an easy pie and is absolutely wonderful!

1 cup real pumpkin, not the canned.
1/4 cup evaporated milk
1 cup sugar
1/4 cup self rising flour
1 Tbspn pumpkin pie spice
1 egg

Yes, it's time for a round of laughter!!!

Preheat oven to 425. Mix all ingredients well in a medium bowl. Pour into one of Dwights Pie Crust (unbaked)... of course this recipe on this thread!
Place in oven @ 425 for 15 minutes, only!!! Then you will turn the heat down to 350 and finish baking for 35 minutes or until crust is golden brown and pie is firm to the touch.

Folks, I hope you try these recipes, but one thing you've got to include in both of these, is good company and plenty of laughter!
I have so enjoyed the comraderie of my fellow baker's! We have laughed till we cried or had to got tinkle in a hurry!!!!Razz!!!

Dwight's Coconut pie filling

1 1/2 cups sugar
3/4 stick softened butter-room temp.
3 eggs
3 cups coconut
1 cup milk
1 Tbspn. self rising flour
1 tspn. coconut flavoring

Blend sugar and butter till creamy
add eggs and beat
add coconut, milk, flour and flavoring
pour into 9 inch unbaked pie crust
350 degrees for 45 minutes.

We're having another baking class next Tuesday @ 7 the 20th...well be doing all things pumpkin!!! Pumpkin Roll, Pumpkin Pie and Pumkin Fudge!!! and whatever else we can get into! If you're interested p.m for contact info!!!

I was asked for the pie crust recipe that we used for our pie's and for our crackers...Oh my those were so good!!!

Dwight's Pie Crust

2 1/2 cups all purpose flour
1 1/2 teaspoon salt
cold butter, very very cold butter cut into cubes equaling 5 tablespoons
cold shortening, again very very cold equaling 11 tablespoons. You can substitute butter flavored Crisco if you like.
1/2 cup of very very ice cold water. If needed you can add 2 tablespoon more of water...only if needed.

Mix flour and salt together
Cut in butter lightly with flour
Mix in shortening lightly
add half water mixing with fork
add rest of water turn with fork

Do not knead. Form dough into ball. Divide into 3 piece's. Refrigerate 2 of the pieces while you roll out the first ball.
Be sure you flour your rolling surface generously.
Fill with desired pie filling and bake.
You can pre-bake shell on 350 degrees til golden brown.

Now for the crackers....
We took the additional dough or you can use the leftover dough and roll very very thinly...
score into squares sized to your liking, like the size of crackers
place onto ungreased cookie sheet
I used sea salt...sprinkling just alittle all over the crackers...then gently pressed salt into dough.
Bake at 350 till light golden...
I'm telling you these things are great! You can use your imagination when seasoning these also...try the dill dry mix or the dry ranch dressing mix. Dry cheese powder or any herbs or herb mixture you prefer!

Baking class was a big hit tonight...

Made the best homemade pie crust and filled it with homemade coconut filling! Thought the hubby was gonna have a stroke...thought he had died and gone to pie heaven!!!!
Another best was to come..the leftover pie crust was then made into saltine crackers, yep you read that right...homemade saltine crackers!!! I never in my life thought a cracker could taste so good. Topped that with some homemade salsa brought over by grannyfelts and it too is homemade...m-m-good!!!!
Then for the icing of the cake!!!! First we put together the homemade buttercream chocolate icing...another m-m-good! Now mind you this buttercream is not like what you get in the stores or commercial bakeries...this recipe is just a bit different. Then Mr. grannyfelts demonstrated how to do a basket weave pattern on the cake. After getting the side of the cake looking like a basket...we started on the rose's...I've never made a rose for a cake, but I sure can now!!! Along with the stems and leaves!!! Listen folks it's not as easy as you may think it is. Oh and I can't forget the rippled wave pattern surrounding the top of the cake! Beautiful, just beautiful!!! If I might say so myself!!!!

I just want to thank grannyfelts and hubby for 2 awesome baking class's!
It was so much more than just about food and baking. It was about meeting two very special and giving people...not to mention how talented they both are!

No, say cheese, well there is...it's already in the flour/mix. In the long run it is more economical to purchase this type of mix than it is to purchase, flour, crisco and buttermilk and butter! Try it...it is truly the miracle mix for biscuits. I do believe however that most of my trouble with biscuit making was working the dough to much!

anyway, why don't you come and join us Tuesday evening! we gonna do piecrust and cake!!!!

Daddy P...girl/boy...that tomato jelly is to die for...OMG!!! is that stuff good...it almost taste like molasses...if you come Tuesday night, grannyfelts and hubby were kind enough to give me a jar...we'll make another pan of biscuits and you can try some...I'm telling you that is the best stuff ever!!!!
