Baked Macaroni & Cheese 1 lb. elbow macaroni 3 T. butter 1/4 C. flour 1 can evaporated milk 1 C. regular milk 2 C. half & half 1/4 t. pepper 1/2 t. salt 1 T. dry mustard 1 pkg. shredded Cheddar cheese 1 pkg. Colby cheese 1/4 C. Parmesan 1 block Monterey Jack cheese 1/2 block Velveeta 2 eggs 1/4 C. chopped onion
Preheat oven to 350. Cook pasta and drain. Melt butter and add cooked pasta. Add eggs and onion. Spray casserole dish. In saucepan combine rest of ingredients (except cheeses). Stir constantly bringing to a boil. Continue stirring while bubbling until very thick. Remove from heat and stir in cheeses until melted. Add to pasta and stir well. Pour mixture into casserole dish. Bake at 350 for 25-30 minutes or until brown.

Baked Mac &Cheese (lo fat) 3 tablespoons plain dry breadcrumbs 1 teaspoon extra-virgin olive oil 1/4 teaspoon paprika 1 3/4 cups 1% milk, divided 3 tablespoons all-purpose flour 2 cups grated extra-sharp Cheddar cheese 1 cup low-fat (1%) cottage cheese 1/2 teaspoon salt, or to taste Freshly ground pepper to taste 8 ounces whole-wheat elbow macaroni or penne Put a large pot of lightly salted water on to boil. Preheat oven to 450 º F. Coat an 8-inch square (2-quart) baking dish with cooking spray. Mix breadcrumbs, oil and paprika in a small bowl. Heat 1 1/2 cups milk in a large heavy saucepan over medium-high heat until steaming. Whisk remaining 1/4 cup milk and flour in a small bowl until smooth; add to the hot milk and cook, whisking constantly, until the sauce simmers and thickens, 2 to 3 minutes. Remove from heat and stir in Cheddar until melted. Stir in cottage cheese, salt and pepper. Cook pasta for 4 minutes, or until not quite tender. (It will continue to cook during baking.) Drain and add to the cheese sauce; mix well. Spread the pasta mixture in the prepared baking dish. Top with the breadcrumb mixture. Bake the casserole until bubbly and golden, 25 to 30 minutes. Yield: 4 servings (Serving size: 4 servings)

looking for a delicious, old fashioned,VERY CHEESY macaroni. My grandmother used to make it when I was littlt but I don't have a recipe
