Baked Grits

iem you can use cooked shrinp but raw is better ,

Baked Shrimp and Grits
5 c. water
1 1/2 lbs. unpeeled medium shrimp
3-1/4 c. water
1/2 t. salt
1 c. regular (not instant) grits, uncooked
2 large eggs, lightly beaten
1/4 c. milk
2 cloves garlic, minced
1-1/2 c. shredded cheese (sharp Cheddar is good)
(Cayenne or Tabasco sauce to taste)

Bring 5 c. water to a boil and cook the shrimp 3-5 minutes, until pink.
Drain and rinse in cold water; peel and devein.
Bring 3 1/4 c. water to a boil with the salt and stir in the grits.
Cover, reduce heat, and simmer for 10 minutes.
Remove from heat.
Combine eggs and milk; stir in grits gradually.
Stir in shrimp, garlic, hot pepper or hot sauce, and 1 c. of the cheese.
Spoon into a lightly buttered 11 x 7 pan and sprinkle the top with the rest of the cheese.
Bake in a 350 degree oven for 1/2 hour.
Let stand for about 5 minutes before serving.
Serves 6.

Baked Cheese Grits
4 c. water
1 tsp. salt
1 c. grits
4 beaten eggs
1 1/2 c. grated sharp Cheddar cheese or Pepper Jack
1 c. milk
1/4 c. butter
Preheat oven to 350 degrees.
Grease 3 quart baking dish.
Bring water to boil.
Add salt, stir in grits.
Cook 4-5 minutes.
Remove from heat.
Stir small amount of mixture into eggs.
Then return all of mixture to sauce pan.
Add cheese, milk and butter.
Bake 1 hour. Let cool 10 minutes.

Never had them baked but have had them fried...and they are delicious. Don't see why you couldn't put eggs, a little milk or cream or cheese, and some crumbled bacon or diced ham and perhaps a few fine chopped onions and green peppers. Add some margarine, salt, and pepper if you like. Serve with some warm, homemade salsa and chow down.

I make baked grits sometimes for breakfast. However, I am wondering if you can mix scrambled eggs and grits and bake them or will it be to dry. Has anyone else tried this. Would also love to hear how you bake your grits.
