The recipe I posted was for Caramel Apple Salad and I think you might be thinking of just a regular apple salad.

Just use the fruits/ingredients of your choice and add cool whip and some powdered sugar to your taste. We always use diced unpeeled apples, raisins, grapes, cherries, strawberry ice cream topping, pineapple tidbits, pecans, shaved carrots and sometimes marshmallow's. ( the marshmallow's break down fast. (So only use if making a small amount ) Also can use Splenda instead of powdered sugar for anyone that can't have sugar. All Hugh Chatham employee's loved this. When we had free meal days they would clean the bowl out fast.

....Apple Coconut Salad 4 apples (2 green, 2 red) 1 c. coconut 2 (8 oz.) Cool Whip 1/2 c. nuts, chopped 1 c. celery, chopped 1/2 c. salad dressing Dash salt 1 tbsp. lemon juice Do not peel, just cut up cored apples. Add celery, coconut, Cool Whip and nuts. Add lemon juice, salad dressing, salt together. Serves 8. ....Apple Pineapple Salad Salad 2 large red delicious apples, cored and cut into chunks 2/3 cup crushed pineapple with juice, drained (reserve juice) 1/3 cup diced celery 2 tablespoons raisins Dressing 3 tablespoons plain low-fat yogurt 2 teaspoons mayonnaise 1 tablespoon reserved pineapple juice 1/8 teaspoon cinnamon Combine the salad ingredients in a medium bowl. In a small bowl, combine the dressing ingredients and blend the dressing with the fruit mixture. Refrigerate until ready to serve. ....Apple Salad Dressing 1/4 c. sugar 2 tbsp. vinegar 2 tbsp. flour 1 tsp. vanilla 1 c. water 1 tbsp. butter Mix all ingredients for dressing in a saucepan. Bring to a boil, stirring constantly. Remove from heat and cool. Salad 3 red apples, diced but not peeled 1/2 c. chopped nuts 1/2 c. drained crushed pineapple 1 c. miniature marshmallows 1/2 c raisins 1/2 c. chopped celery When dressing is cool, pour over fruit mixture and toss lightly. Refrigerate overnight. Will keep for several days in airtight container ....Apple Salad 1 2 apples, diced and unpared 1/2 cup diced celery 1/4 cup raisins 1 Tablespoon lemon juice 1 Tablespoon reduced-calorie mayonnaise Lettuce leaves (optional) Preparation: Combine apples, celery, raisins, lemon juice, and mayonnaise. Mix well. Refrigerate until served. Serve apple salad on lettuce leaves, if desired. Yield: 8 servings ....Apple-Grape Salad 1 envelope unflavored gelatin (1 Tbsp.) 1 cup Rome or Fuji apple, unpared, diced 1/4 cup water 1/2 cup red grapes, halved and seeded 1 1/2 cups apple juice 1/4 cup chopped celery Soften gelatin in water for 5 minutes. Heat gelatin over low heat, stirring constantly, until dissolved. Add apple juice. Chill until mixture begins to thicken. Stir in fruit and celery. Pour into 3-cup mold. Chill until set. Makes 4 servings. ....Favorite Apple Salad 1 (20 ounce) can unsweetened pineapple chunks 1/4 cup butter or margarine 1/4 cup sugar 1 tablespoon lemon juice 2 tablespoons cornstarch 2 tablespoons cold water 1 cup mayonnaise 8 cups chopped tart apples 2 cups green grapes 2 teaspoons poppy seeds 3/4 cup chopped pecans, toasted
Drain pineapple, reserving juice; set the pineapple aside. Place juice in a saucepan; add butter, sugar and lemon juice. Bring to a boil. Combine the cornstarch and cold water until smooth; add to the saucepan, stirring constantly. Return to a boil; cook and stir for 2 minutes. Chill. Stir in mayonnaise. In a large bowl, combine pineapple, apples, grapes, poppy seeds and cooked dressing. Fold in the pecans just before serving. Yield: 14 servings

Before Prime Sirloin in Elkin closed, they used to have Apple Salad on their salad bar. It was more of a dessert, though, and I've tried to make it from guessing, but I've never quite hit the recipe. And now, it's been so long since I had it that I can't even guess anymore!
Does anyone know their recipe? I know it had diced apples, marshmallows, shaved carrots, and raisins (which I picked out), and the "wet" was probably just whipped cream. It was similar to the one JH44 posted here, but not quite:

The one from Prime Sirloin definitely didn't have egg or peanuts, and I would be surprised to hear that it had vinegar.
