Each year the state home economics folks in Raleigh issue warnings about the safety of drinking home made apple cider. Here are several websites that you should check out as you can introduce botulism and salmonella to the drinker, particularly vulnerable are babies and young children and elderly persons. It's delicious if handled properly...just take the time to spend the extra research time so that you or a loved one isn't made ill or dies from improperly processed and stored cider. That's the reason the state doesn't allow raw cider to be sold alongside the road as stores now like they did just a few months ago.

I am a certified apple cider taste tester, so according to the statutes of North Carolina, you must provide me with a generous quantity of your homemade cider for the purposes outlined in said statute.

Apple Cider Here is how we make apple cider. 1/2 cup brown sugar 1/4 tsp. salt 2 qts. cider 1 tsp. whole allspice 1 tsp. whole cloves 1 3" cinnamon stick Orange peel or a little juice
Warm all ingredients in a stove-top pan. Serve hot.
