Carne Asada Chimichangas 1 pound top round steak - prepped 1/4 cup olive oil 2 cloves minced garlic 1 tablespoon chopped fresh cilantro 1 tablespoon minced Jalapeno peppers 1/4 cup lime juice 1 tablespoon tequila[OPTIONAL] 1 tablespoon chili powder 1/2 teaspoon salt 1/2 teaspoon black pepper 1 cup thinly sliced onion 1 cup drained black beans (from the can) 4 large flour tortillas 1 cup shredded cheddar cheese 12 toothpicks oil for frying 1 cup sour cream 1 avocado - skinned, seeded and cut in 8th's 1 cup salsa Trim the top round and cut in 1/2-inch pieces. Place in a bowl and hold in the refrigerator. In a separate mixing bowl, combine the olive oil, garlic, cilantro, Jalapenos, lime juice, tequila, chili powder, salt and pepper. Combine and pour over the meat. Hold marinating meat covered in the refrigerator for at least 1 hour prior to use. In a large, hot saute pan, place the marinade without the meat. Add the onion and cook for 1 minute. Add the meat to the pan and cook for approximately 5 minutes. Remove the cooked meat from the pan and place in a bowl, leaving the juice in the pan. Boil the juice for approximately 5 minutes, or until it thickens. Pour this thickened juice over the meat. Add the beans and combine. Lay a tortilla on a cutting board. Place 1/4 of the meat/bean mixture in the center of the tortilla. Place 1/4 cup of shredded cheese on each meat portion. Fold up the sides and roll from the bottom to form a burrito. Stick a toothpick in the middle and on both ends to fasten. Repeat STEP 4 for the rest. Heat approximately 1-inch of oil in a large pan. Carefully place the chimichangas in the hot oil and brown on all sides. Carefully remove from pan and drain on paper towels. Remove the toothpicks. Place the CARNE ASADA CHIMICHANGAS on plates and garnish with a dollop of sour cream, salsa and a piece of avocado.

Taco Bake-Mexican Lasanga if you will: -Line a baking pan with aluminum or just generously spray with cooking oil spray -Place soft tortillas on bottom of pan -Layer the following: seasoned ground beef (just use taco or burrito seasoning) cheese (i like to use mexican cheese blend) refried beans (if you like) mexican rice(use the 99 cent lipton kind, follow instructions on back) salsa more tortillas (repeat above steps) -end with cheese genourously over the top, bake until cheese is melted (bake at about 350) let stand to gel together well, then scoop out as if lasanga--serve with sour cream and guacamole on top--simple, easy, and good!! *ingredients can be altered according to your taste

Mexican Cornbread 1# hamburger ( I use ground chicken too) 1 pack taco seasoning for meat (optinal) 1 box jiffy cornbread mix (or make your own) 1 cup salsa 1 onion (chopped) 1cup chedder cheese shredded Green or (and) Hot pepper if you like it ,chopped fine Brown burger ,drain add taco seasoning, Put in 12 inch cast iron skillet or glass dish. Add salsa ,peppers onions and half of cheese.(in layers) make cornbread mix per box directions pour over other ingredents. Cover with other half cheese and bake till done. Use box directions for baking Serve with Jalapeno rings,sour cream on the side.
Shrimp and Chorizo Quesadilla 10 large shrimp peeled, deveined, sliced in half 3 links chorizo, remove skin 4 12 inch garlic and herbed tortilla shells 1 bag mixed Monterey Jack and cheddar cheese guacamole salsa sour cream olive oil In a saute pan with olive oil, cook peppers, shrimp and chorizo. Drain and place ingredients on half of the tortilla shell then add cheese mixture. Fold the shell over in half and lightly brown until cheese melts in nonstick saute pan or oven. Cut in 4 triangles and put a spoon full of salsa,sour cream and guacamole. add a little chopped cilantro for garnish and taste. Taco Burgers 2 pounds ground beef 1/2 cup canned chopped green chilies 1 cup onions, chopped 1 package taco seasoning lettuce 1 tomato, chopped 4 English muffins, split, toasted and buttered 3 tablespoon sour cream Combine beef,seasoning and half the chilies and half the onion in a bowl. Shape into burgers. Cook to desired doneness. Combine tomato and remaining chilies and onion in a bowl. Place lettuce and burgers on bottom muffin halves. Top with tomato mixture, sour cream, and remaining muffin halves.

i take chicken breast and season it with taco seasoning and bake it or sometimes saute it, make up some mexican rice from the rice section on the store, saute an onion (i have to use a vidalia lol)
i serve the bed of rice with the onion on top with the chicken and then a mexican cheese blend sprinkled over it while it's hot to melt, serve it with toritlla chips
this is similar to the pollo delight you get at chile verde, my kids like my version better and it's less expensive too

I just started dating this guy, && his favorite food is mexican. I would love to impress him and cook for him...but i have no idea where to start!!! any good mexican recipe ideas???
