amalfi's tomato soup

Spicy Tomato Soup
4 pounds fresh tomatoes, quartered
4 cloves of garlic
1 small carrot, peeled and chopped
2 tablespoons olive oil
Sea salt to taste
freshly ground black pepper
1 small onions
3 cups V8 juice
2 tablespoons Worcestershire sauce
juice of 2 lemons
~~Garnish~~
1/2 cup thinly sliced red onions
1/4 cup small fresh basil leaves
1/4 cup small fresh flat leaf parsley
drizzle of extra virgin olive oil

Preheat the oven to 400ºF.
On a baking sheet, toss the tomatoes,onion, garlic, carrots and olive oil together.
Season with salt and pepper.
Roast for 15 minutes, or until the tomatoes are tender.
Remove from the oven and cool completely.
In a food processor with a metal blade,
combine the roasted tomatoes,carrot, onions, and parsley.
Puree until the mixture is smooth.
Add the V8 juice, Worcestershire sauce and juice from 2 lemons.
Puree until the mixture is smooth.
Season with salt and pepper.
Remove the mixture from the food processor and pour in a sauce pot.
Simmer on low heat for 20 minutes.
Serve with Garnish below.
1 TBS per Bowl
In a mixing bowl, toss the red onions, basil and parsley.
Season with a drizzle of the extra virgin olive oil, salt and pepper.
Makes 6 to 8 servings

Progesso has a good tomatoe and basil soup, but I can only find it at Lowes...it is very good!

Bushman's recipe sounds great tho!!...and so simple I might even try it.

This is a recipe I use in the summer when the Tomatos are ripe
and I have fresh Basil growing .Simple and great

Tomato Basil Soup
4 tomatoes - peeled, seeded and diced
4 cups tomato juice
14 leaves fresh basil
1 cup heavy whipping cream
1/2 cup butter
Thin sliced green onion for garnish and taste
Sea salt andFresh Ground pepper to taste
Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.
Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

it's a tomato and basil soup...sorry don't know the recipe...but it is tasty!

does anyone know what is in the tomato soup at amalfi's restaurant..
