My aunt makes something that's delicious outta pumpkin...it's called pumpkin cream cheese roll or something like that...it's awsome, but I don't have the recipie & now I wish I did

bushman, made this pumpkin bread today and it turned out great. i actually put some glaze on top of it and that just set it off. thanks for sharing

How to Roast Pumpkin Seeds Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've removed the seeds from the pumpkin, before the pulp has dried.) Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray. Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes. Let cool and store in an air-tight container. ,,,,Maryland Pumpkin Seeds 4 cups raw pumpkin seeds 1/4 cup seafood seasoning, such as Old Bay™ vegetable oil cooking spray Preheat the oven to 300 degrees F. Rinse pumpkin seeds in a colander. Spread out on paper towels and pat dry. Coat a large baking sheet with cooking spray and spread the pumpkin seeds out in a single layer. Spray the tops of the seeds with additional cooking spray. Sprinkle the seafood seasoning evenly over the tops. Bake for 30 minutes in the preheated oven, stirring occasionally, until dry and toasted. Add the pumpkin seeds and sprinkle the remaining sugar over them. Stir with a wooden spoon until the sugar melts, about 45 seconds. Pour seeds into the bowl with the spiced sugar and stir until coated. Allow to cool before serving. Store in an airtight container at room temperature.

Pumpkin Stew This Pumpkin Stew recipe is baked and served in the pumpkin. It's a neat way to cook and serve pumpkin stew. Your guests will be delighted! 1 10 - 12 pound pumpkin 2 lb. Beef stew meat 2 tbs. Oil 1 Bell Pepper 1 Onion 4 Medium potatoes 3 Carrots 2 Cloves of Garlic 2 Sticks of Celery 1 15oz. can of diced tomatoes 2-3 cups Water Salt to taste Pepper to taste Carve a hole in the top of the pumpkin and remove seeds, and stringy insides. Set pumpkin aside. In a dutch oven brown 2 lbs of stew meat in oil. Add in 1 bell pepper(sliced into inch thick slices), 1 onion (sliced), 4 medium potatoes(cubed), 3 carrots(cubed), 2 cloves of garlic(diced), 2 sticks of celery(sliced), 1 - 15 oz can of diced tomatoes. Add salt and pepper to taste. Add 2 - 3 cups of water. Let simmer for 1 hour. Place pumpkin in shallow pan, and place stew inside pumpkin. Brush the outside of the pumpkin with a light coating of oil. Bake pumpkin and stew at 350 for 2 hours, or until pumpkin is tender. Serve wile hot. Be sure to get chunks of pumpkin in your stew, as they enhance the flavor of the stew

Take a 9 or 10 in pumpkin .Cut top out like for a lantern.Clean out insides and shake a little salt garlic powder and powder mustard.Take two packs of chicken rice a roni and cook as directed.Cook 1 lb hamburger (I use deer burger) Or any meat you like diced .Mix all together. Place pumpkin in pan with 1/2 in water in pan and cook in oven at 350 for 30 minutes.Then cover pumpkin top with foil and continue baking for 1 hr . Make sure pan has water in it during cooking.

Pumpkin Bread 3 cups canned pumpkin puree 1 1/2 cups vegetable oil 4 cups white sugar 6 eggs 4 3/4 cups all-purpose flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 1/2 teaspoons salt 1 1/2 teaspoons ground cinnamon 1 1/2 teaspoons ground nutmeg 1 1/2 teaspoons ground cloves
Preheat the oven to 350 degrees F. Grease and flour three 9x5 inch loaf pans. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed. Variations Add raisins, mini chocolate chips (the best), pecans, or walnuts

find a better homes and garden cookbook and try the recepie for pumpkin bread, with or with out black walnuts, slice and spread with butter or cream cheese frosting, .great tasting goodies---mmmmnnnn!!!!

Frosted Microwave Pumpkin Bars 4 eggs 1 cup vegetable oil 2 cups sugar 1 can (15oz) pumpkin ~2 cups 2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons cinnamon 1/4 teaspoon ground cloves 1/2 teaspoon ground nutmeg . Frosting: 6 ounces cream cheese 1/3 cup butter 1 tablespoon cream 1 teaspoon vanilla 4 cups confectioners' sugar Preparation: Blend first 4 ingredients in a bowl. Add dry ingredients and mix well. Divide batter between 2 8-inch glass baking dishes. Microwave (one at a time) for 5 minutes on HIGH (100% power). Cool and frost. Frosting: Microwave cream cheese and butter for 1 or 2 minutes on LOW until soft, not melted. Stir in cream and vanilla. Gradually add confectioners' sugar; beat well. Pumpkin Cookies with Walnuts or Pecans 1/2 cup butter, room temperature 1 1/2 cups brown sugar, packed 2 large eggs 1 cup mashed or canned pumpkin 1 teaspoon vanilla extract 2 1/2 cups flour 1 tablespoon baking powder 1 1/2 cups chopped walnuts or pecans 2 teaspoons pumpkin pie spice Preparation: Preheat oven to 375° F. In a large mixing bowl, beat butter and sugar together until light and fluffy. Beat in eggs, one at a time; stir in pumpkin and vanilla extract. In a separate bowl, combine flour, baking powder and spices; stir to blend. Add dry ingredients to butter and sugar mixture; stir well. Stir in chopped nuts. Drop by rounded teaspoonfuls about 1-inch apart onto greased baking sheets. Bake in upper half of oven for about 12-14 minutes. Remove pumpkin cookies to wire racks to cool. Makes about 3 dozen cookies. Pumpkin Pudding 2 cups pumpkin purée 3/4 cup light brown sugar, packed 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger 1/2 teaspoon salt 3 eggs, slightly beaten 1 cup heavy cream 3/4 cup milk Blend all ingredients; pour into a buttered 1 1/2 quart casserole. Bake at 350° for 55 to 65 minutes or until a knife inserted near center comes out clean. Cool and garnish with dollops of whipped cream or whipped topping.

Pumpkin Cake 15 oz. can solid-pack pumpkin (2 cups) 12 oz. can evaporated milk 3 eggs 1 c. sugar 4 t. pumpkin pie spice 1 pkg. yellow cake mix 3/4 c. butter or margarine, melted 1 1/2 c. chopped walnuts Vanilla ice cream or whipped cream In a mixing bowl, combine pumpkin, evaporated milk, eggs, sugar and pumpkin pie spice. Transfer to a greased 13x9x2-inch baking pan. Sprinkle with dry cake mix and drizzle with butter. Top with walnuts. Bake at 350 º for 1 hour or until knife inserted near the center comes out clean. Serve with ice cream or whipped cream Pumpkin Pie Cake 1 yellow cake mix (hold out 1 c.) 1 egg 1 stick margarine, melted Filling,,,, 1 (20 oz.) pumpkin 2/3 c. brown sugar 2 tsp. pumpkin pie spice 1 tsp. Cinnamon 2 eggs 2/3 c. milk Mix cake mix, egg and margarine. Press into 13x9 inch pan. Mix filling, pour over crust. Sprinkle with the 1 cup cake mix and bake at 350 º for 45-50 minutes. When cool, can top with Cool Whip Or whipped cream if desired.

I made 4 pumpkin pies this week and now that has my taste buds wanting more things pumpkin, you can only eat so many pies, LOL. I've had pumkin rolls before and they are good too.
What pumpkin recipes have you guys made other than pies?
